Recipe of the Month – Potato gnocchi

Potato gnocchi
Potato gnocchi

Ingredients
800 gm boiled potatoes ( Idaho or Nadine )
400 gm plain flour
Pinch salt
2 eggs

Get it together
Boil potatoes until completely soft, drain and allow to go cold
Pass through a sieve and add salt
Place on bench the potatoes and add the flour
Make a well and place the eggs into it
Slowly bring the dough together if water is needed add to mixture, once the dough is sticking together start to knead until a smooth dough has formed.
Then cut into smaller dough balls and roll into long 5cm round logs
With a knife cut into small dumpling sized pieces and place on tray
In a large pot of boiling salted water place the dumplings and allow to cook
Once the dumplings rise to the top cook for 2 minutes further to cook through
Then toss into bowl with sauce of choice
