Recipe of the Month – Arrancini



500 gm medium grain rice
1 litre water
100 grams tasty cheese
100 grams mozzarella
200 grams breadcrumbs
50 gm sesame seeds
4 eggs (beaten)
200 gm plain flour
1 egg

Get it together
Bring to boil a pot of salted water. Pour in the rice and continually stir so that it
doesn’t stick to bottom.
Allow the water to be absorbed completely by the rice. It will be very sticky and
thick, turn into a bowl and allow to cool down. ( check to make sure rice in cooked
In three separate bowls place flour, beaten eggs and breadcrumbs and sesame seeds.
Once rice has cooled down add your cheeses, salt and pepper and 1 egg to help combine
Mix thoroughly and taste to check seasoning.
Then with wet hands roll out balls of rice to whatever size you like and place on a
tray. Then start to roll in flour first, eggs second and finally breadcrumbs. Place
back unto a tray and place in fridge to chill for 20mins.
Once the arrancini has firmed you can then begin to fry.
In a deep pot or fryer, cook until golden brown, then serve.
